Use It Because You Know It
People that have a deep understanding of a subject will use it just because they know it, regardless of whether it's applicable to the project that they're working on. I'm certainly one of those people that knows harmony very well so I use it. I know what an Am6 chord is and I'll go to the piano to explore that sound. Other people might discover it without knowing what it is in a theoretical sense, so they're using it differently. There might be a subtle difference between the sound of something that arises from knowledge and the sound of something that arises from ignorance, even though there is no difference in reality.
People are looking for things that are "genuine" in some way, or arising from ingenuity, or from intuition, or the "curvilinear" nature of creativity. Perhaps things that are too theoretical come across as cold so it doesn't activate the limbic system.
People want bouba, not kiki.
